I don’t know about you, but when I think about cooking with weed, it usually makes me think of brownies, not the generic ones with the herb hanging out on the side like bits of moss but the ones made with green butter. Or I think about the granola bars that I ate in my early twenties that gave me vertigo. Yeah, I know edibles sound great, but sometimes they can be pretty hardcore.  Believe me, I can hold my own but that granola bar… yikes. Anyways before I go into back flashes of my edible episodes, I’ll get back on track, edibles. So I’m sure that when most of us think about edibles, it’s mostly baked goods with the notorious green butter. Things have changed. These days cooking with cannabis has become more advanced and well fancy.
There cookbooks and websites that have precise methods to extract the perfect amount of THC for your baking pleasure such as a process called decarbing. There are recipes that blow the everyday pot brownies out of the water like CannaBaklava. Yes, please. I’m serious it’s crazy how intricate the recipes have become. They range from marijuana meatloaf and garlic herb mashers to pasta dishes that you would find in a five-star restaurant.
Not only have the recipes become more adult friendly but so has the culture that surrounds it. With the old school pot brownies left behind so are the midnight cooks to go with it. That’s not to say that these cooks don’t cook at midnight, but the cliché of stoner cook has been long left behind.  These days, these culinary trendsetters are paving the way for the cannabis kitchen craft. Not only do these cooks use top notch ingredients but they are using some of the dankest buds to go with their amazing dishes. Not only will your taste pallet scream with delight but you’ll be feeling amazing by the end of your meal.
Some of the chefs that you should check out:
-Chris Sayegh, known as “The Herbal Chef” who has been cooking with cannabis for the past few years to make it the ultimate experience when it comes to the consumption of edibles.
-Correen Carroll, another amazing chef that has taken cannabis cuisine by storm. I suggest you check out her site; it is pretty awesome.
-Madame Munchie who in 2014 won 1st place for Best Edible. They carry a crazy variety of macaroons that are hand crafted using fresh and local ingredients.
Some establishments have gone as far as having pairings instead of just marijuana as a plain old ingredient. That’s right pairings, just like you have with wine or beer at fine establishments. How awesome is that? Enjoying some awesome food and great weed in a great environment. Sounds like a great time.  Now I leave you with green treats and sweet dreams.
